INGREDIENTS
- 50 g all-purpose flour
- 25 g cocoa (I recommend high-quality with a higher cocoa butter content)
- 70 g powdered sugar and powdered sugar for coating
- 25 g softened butter
- 1 egg
- 3 teaspoons of orange zest or orange flakes and 1 teaspoon of orange juice
- ½ teaspoon baking powder
INSTRUCTIONS
- 1Wash the orange, scrub it with a brush, and pour boiling water over it three times to remove wax and chemicals. Grate the orange part of the peel on a fine grater.
- 2Sift the flour with cocoa, baking powder, and 70 g of powdered sugar. Add one beaten egg, butter, orange flakes or zest, and liqueur or juice. Work into a dough that is very sticky. Wrap it in cling film and let it chill in the refrigerator for 2 hours.
- 3Divide the chilled dough into 25 parts, form them into balls, and immediately coat them in a thick layer of sifted powdered sugar. Place the balls on a baking sheet lined with parchment paper, leaving large gaps between them, as they will rise significantly during baking.
- 4Bake for 10 minutes in an oven preheated to 200°C. Let them cool partially on the baking sheet, then transfer them to a rack. They will last about 7 days in a sealed container.
