INGREDIENTS
- 120 g softened butter
- 210 g all-purpose flour
- 70 g instant polenta
- 80 g powdered sugar
- 2 egg yolks
- 1 tablespoon lemon zest and 1 tablespoon lemon juice
- 1 teaspoon fresh lemon balm
- a pinch of salt
INSTRUCTIONS
- 1Cream the butter with sugar until fluffy, gradually mix in all the remaining ingredients into the dough. Work into a dense dough, which we divide into two parts. From each part, form a roll with a diameter of 5 cm. Wrap the rolls in cling film and let them harden in the refrigerator for at least an hour, or even overnight.
- 2Cut the hardened dough into slices about 5 mm thick and spread them on a baking sheet lined with parchment paper. Leave larger gaps between the slices, as the dough will rise significantly during baking. Bake in an oven preheated to 180°C for about 15 minutes.
