DOUGH
- 300 g plain flour
- 100 g powdered sugar
- 150 g softened butter
- 1 egg and 1 cooked yolk
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- ½ teaspoon baking powder
FOR JOINING AND DECORATION
- orange marmalade
- 2 oranges and 1 teaspoon orange juice
- 20 g granulated sugar
- 100 g dark chocolate
- 10 g hydrogenated fat
INSTRUCTIONS
- 1Sift the flour, baking powder, and sugar onto a board, crack the whole egg into a well in the flour, finely grate the yolk, cut the butter, and add lemon and orange zest.
- 2Work into a smooth dough, wrap in cling film, and let it firm up in the fridge for 2 hours.
- 3Roll out the dough to a sheet 3 mm thick. Cut out stars or flowers. Place on a baking sheet lined with parchment paper, keeping not too large gaps.
- 4Bake for 12 to 15 minutes in an oven preheated to 165°C. With the fan on, 7 minutes is enough. Let cool on a wire rack.
INSTRUCTIONS FOR JOINING AND DECORATION
- 1From a chemically untreated washed orange, scrape the zest with a citrus peeler to create long strips. In a saucepan, mix granulated sugar with 100 ml of water, add the orange zest, and cook over low heat until the water evaporates and the sugar on the zest lightly caramelizes. Let the orange zest cool on a piece of parchment or wax paper.
- 2Join the stars with orange marmalade.
- 3Melt the chocolate with the fat in a water bath and stir in the orange juice. Dip the top star in chocolate and immediately place a twist of orange zest on it. Let rest for at least 5 days.
