INGREDIENTS
- 1/2 torn pomelo
- 1 carrot, julienned
- Handful of chopped coriander
- Handful of Thai basil
- Handful of mung bean sprouts
- Peanuts
- Sesame seeds
- 1/2 chopped fresh chili
- 1 clove chopped garlic
- Piece of chopped ginger
- Fish sauce
- Pepper
- 300 g shrimp
DRESSING INGREDIENTS
- 4 tablespoons fish sauce
- 4 tablespoons lime juice
- 4 tablespoons cane sugar
- 1/2 chili
- 1 finely chopped garlic clove
INSTRUCTIONS
- 1Peel the pomelo and tear it into smaller pieces. Cut the carrot into julienne strips. Add mung bean sprouts, chopped coriander, and Thai basil to a bowl.
- 2Sauté the shrimp with garlic, ginger, and chili, season with fish sauce and pepper.
- 3Mix the salad thoroughly and pour the dressing over it, which you prepare by mixing all ingredients.
- 4Serve the shrimp on top of the salad.
- 5Toast the peanuts and sesame seeds, let them cool, then crush them, but leave them in larger pieces.
- 6Sprinkle them over the served salad. Season the salad to taste, add pepper.
