INGREDIENTS
- 240 g whole grain pasta
- 400 g chicken breasts
- 1 tablespoon olive oil
- 1 small white onion (finely chopped)
- 1 clove garlic (pressed)
- 1 tablespoon tomato paste
- 1 can chopped tomatoes
- 1 teaspoon dried basil
- 2 tablespoons fresh chives (chopped)
- 150 g mozzarella (grated or sliced)
- Salt
- Pepper

INSTRUCTIONS
- 1Cook the pasta in salted water for the time indicated on the package. Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a pan and sear the breasts (whole) on both sides – about 3 minutes on one side and 4 minutes on the other. Remove the breasts from the pan and set them aside for later.
- 2Leave the pan on the stove, reduce the heat, and sauté the chopped onion and pressed garlic in the remaining drippings for 2 minutes. Then increase the heat and add the tomato paste. Stir and add the chopped tomatoes, basil, and chives. Cook everything over medium heat for 5 minutes. If the tomatoes start to stick, add a little water.
- 3Return the seared chicken breasts to the pan, pour over the prepared tomato sauce, and top with mozzarella. Cover the pan with a lid and let it cook on medium heat until done (about 3–4 minutes). Serve with the cooked pasta.
