INGREDIENTS
- 800 g granulated sugar
- 100 g dark chocolate with 40-50% cocoa
- 4 oranges
- 1 teaspoon olive oil
INSTRUCTIONS
- 1Pour the sugar into a wide saucepan, add one liter of water, and start heating. Stir until all the sugar dissolves, then bring to a boil.
- 2Rinse the oranges and slice them into pieces less than one centimeter thick. Slice them in such a way that the membranes between the orange segments form a star on each slice. You can cut larger, middle pieces in half. Discard the end pieces.
- 3Add the sliced oranges to the boiling sugar solution and simmer very gently for five minutes. Do not stir too much to prevent them from falling apart. Remove from heat and let the oranges cool and soak in the solution overnight.
- 4Carefully remove the orange pieces and let them drain thoroughly in a colander. Preheat the oven to 70 degrees Celsius. Arrange the oranges on a rack or grid and place them in the oven. Place a baking sheet underneath or at least line the bottom of the oven with aluminum foil to catch any dripping juice. Leave the oven door slightly ajar, or at least ventilate the moisture from the oven from time to time. Let everything dry for about 3-4 hours until the oranges acquire a rubbery, eraser-like consistency. Remove and let cool.
- 5Finally, dip half of each orange piece into melted chocolate mixed with oil and let it set on baking paper. Store sealed and in a cool place.
