INGREDIENTS
- 4 oranges
- 800 g granulated sugar
- 100 g dark chocolate with 40-50% cocoa
- 1 teaspoon olive oil
INSTRUCTIONS
- 1Pour the sugar into a wide saucepan, add one liter of water, and start heating. Stir to gradually dissolve all the sugar, and finally bring to a boil.
- 2Rinse the oranges and cut them into slices less than one centimeter thick. Cut in such a way that the membranes between the segments form a star on each slice. Larger, middle pieces can be cut in half. Discard the end pieces.
- 3Add the sliced oranges to the boiling sugar solution and simmer gently for five minutes. Do not stir too much to prevent them from falling apart. Remove from heat and let the oranges cool and steep in the solution overnight.
- 4Carefully remove the orange pieces and let them drain thoroughly in a colander. Preheat the oven to 70 degrees. Spread the oranges on a rack or grid and place in the oven. Place a baking sheet underneath or at least line the bottom of the oven with aluminum foil to catch any dripping juice. Leave the oven door slightly open, or at least occasionally vent the moisture from the oven. Let everything dry for about 3-4 hours until the oranges reach the consistency of an eraser. Remove and let cool.
- 5Finally, dip half of each orange piece into melted chocolate mixed with oil and let it set on baking paper. Store in a closed container in a cool place.
