INGREDIENTS

  • 1 large red onion
  • 1 large red bell pepper
  • 3 cloves of garlic
  • 1 tablespoon olive oil
  • 800 g canned peeled chopped tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 500 ml water
  • 300 g orzo* in dry state (other short pasta can be used)
  • Salt
  • Pepper
  • 6 chicken thighs with skin (6× 170 g)

INSTRUCTIONS

    Preheat the oven to 180 °C.

    Peel and roughly chop the onion. Clean the bell pepper and cut it into strips. Slice the garlic. Halve the chicken thighs, season with salt and pepper.

    Heat olive oil in a pan, add the halved thighs and fry them on low heat for 2–3 minutes on each side. Then remove the thighs from the pan onto a plate and set aside.

    Leave the pan with the drippings on the stove, add the chopped onion and fry for 1.5 minutes on low heat. Then add the sliced bell pepper, garlic, canned tomatoes, rosemary, oregano, and thyme to the pan and fry everything for another 2 minutes. Then pour 500 ml of water into the pan and cook the whole mixture for about 10 minutes on low heat. Meanwhile, prepare a larger baking dish or casserole.

    After 10 minutes, season the mixture in the pan with salt and pepper, stir in the orzo, and remove the pan from the heat. Transfer the mixture to the baking dish or casserole, arrange the fried chicken thighs on top, place in the preheated oven, and bake for 20 minutes at 180 °C. After the specified time, increase the temperature to 220 °C and bake for another 10 minutes.

*Orzo, also known as pasta rice, are small pasta made from semolina – it is not actual rice, although orzo resembles rice in appearance and has similar uses in the kitchen; you can use it as a classic side dish, but also for preparing risottos or pasta salads.
