INGREDIENTS

  • 20 g fresh yeast
  • 300 ml semi-skimmed milk (lukewarm)
  • 20 g brown sugar
  • 500 g whole grain spelt flour
  • 60 g butter (melted)
  • 1 egg yolk
  • 20 g almond slices
  • 20 g raisins
  • ½ teaspoon salt

  • Xylitol

INSTRUCTIONS

    Crumble the yeast into a larger mug, add lukewarm milk, add brown sugar, and mix everything together. Cover the mug and place it in a warm spot for at least 10 minutes to let the yeast rise.

    Meanwhile, sift the spelt flour and salt into a mixing bowl. Add the risen yeast mixture and melted butter, and use a kneading attachment to prepare a smooth dough (the finished dough will detach from the sides of the bowl). Cover the dough with plastic wrap or a towel and let it rise in a warm place for at least 1 hour.

    About 20 minutes before the dough has risen, preheat the oven to 185 °C and line a baking sheet with parchment paper.

    Sprinkle a little flour on a work surface. From the risen dough, prepare Judas buns on the floured surface – simply separate a piece of dough, roll it into a cylinder, and braid into any shapes you like.

    In a bowl, beat the egg yolk and brush it over the Judas buns. Then sprinkle the buns with almond slices and raisins and transfer them to the baking sheet lined with parchment paper.

    Bake the Judas buns in the preheated oven at 175–185 °C for 15–20 minutes.

    Let the finished Judas buns cool for a while and then serve.
Tip
Before serving, sprinkle the Judas buns with xylitol.
