INGREDIENTS
- 100 g fresh mint
- 300 g sugar
- 750 ml water
INSTRUCTIONS
- 1Rinse the mint leaves under running water and place them in a colander to drain.
- 2Put the water, sugar, and mint into a pot. Cook the mixture over low heat.
- 3Let it simmer for 2 minutes. Transfer the syrup to a bowl, cover with plastic wrap, and let it steep in the refrigerator for a few hours until the liquid is completely cooled.
- 4Blend half of the mint leaves in a blender (or with an immersion blender) with half of the filtered syrup.
- 5Strain the obtained mixture through a sieve, add it to the second half of the syrup that you set aside. Mix the mixture and place it in a bowl and finally into the freezer.
Tip
Break the sorbet with the tines of a fork every half hour until you achieve the right creaminess and density of your sorbet. This will take approximately 3 hours.
