  • 100 g fresh mint
  • 300 g sugar
  • 750 ml water

    Wash the mint leaves under running water and place them in a colander, let them drain.

    Put water with sugar and mint into a pot. Cook the mixture over low heat.

    Let it boil for 2 minutes. Transfer the syrup to a bowl, cover with cling film, and let it steep in the refrigerator for a few hours until the liquid is completely cold.

    Blend half of the mint leaves in a blender (or with an immersion blender) with half of the filtered syrup.

    Filter the obtained mixture through a sieve, add it to the second half of the syrup that you set aside. Mix the mixture and put it into a bowl and finally into the freezer.
Tip
Break up the sorbet with the tines of a fork every half hour until you achieve the correct creaminess and consistency of your sorbet. This will take approximately 3 hours.
