INGREDIENTS
- 300 g Freee Doves Farm self-raising white flour blend (2 cups)
- 220 g granulated sugar (1 cup)
- 3 eggs (yolks and whites separated)
- 200 g 12% cream (plant-based cream)
- 1 sachet vanilla sugar
- Pinch of salt
- Oil for greasing the ceramic lamb cake mold
- Smooth rice flour for dusting the ceramic lamb cake mold
INSTRUCTIONS
- 1Whip the egg whites with a pinch of salt until stiff peaks form.
- 2In a second bowl, whisk the egg yolks with the sugars, cream, and flour.
- 3Carefully fold the stiff egg white peaks into the egg mixture.
- 4Grease the lamb cake mold with oil and dust with smooth rice flour. Pour the mixture into the ceramic lamb cake mold and cover with the other half of the mold.
- 5Place into a cold oven, set it to 180 °C and bake for approximately 60 minutes.
- 6Then remove from the oven and let cool in the mold for another 20 minutes. Soak a kitchen towel in cold water and place it over the lamb cake mold. After another approximately 20 minutes, remove the cover and unmold.
- 7The lamb cake can be dusted with powdered sugar, coated with chocolate, or decorated in other ways.
