INGREDIENTS

  • 500 g pork belly
  • 1 tablespoon sugar
  • 2 tablespoons fish sauce
  • 1 teaspoon salt
  • A pinch of pepper
  • Spring onion for garnish
  • Jasmine rice

INSTRUCTIONS

    Heat sugar with a drop of water in a pan over medium heat until it starts to caramelize. Then add the diced meat, fish sauce, salt, and pepper to the sugar. Mix and let it rest for 30 minutes.

    Sauté the meat for about 8 minutes until it darkens. Add enough water to cover the meat and cook for about 1 hour until almost all the water evaporates.

    Serve with jasmine rice.
