INGREDIENTS
- 400 g tofu
- Can of tomatoes
- 2 tablespoons fish sauce
- 1/2 tablespoon cane sugar
- 1 shallot
- Spring onion for garnish
- Pinch of salt
- Pinch of pepper
- 6 tablespoons vegetable oil
- Jasmine rice
INSTRUCTIONS
- 1Pat dry the tofu with a paper towel, cut into cubes, and fry in oil until golden.
- 2In a pot, sauté the finely chopped shallot, then add tomatoes, sugar, and fish sauce.
- 3After 5 minutes, add the tofu and simmer over low heat for 15 minutes.
- 4Season with salt and pepper and sprinkle with chopped spring onion.
- 5Serve with jasmine rice.
