INGREDIENTS

  • 400 g tofu
  • Can of tomatoes
  • 2 tablespoons fish sauce
  • 1/2 tablespoon cane sugar
  • 1 shallot
  • Spring onion for garnish
  • Pinch of salt
  • Pinch of pepper
  • 6 tablespoons vegetable oil
  • Jasmine rice

INSTRUCTIONS

    Pat dry the tofu with a paper towel, cut into cubes, and fry in oil until golden.

    In a pot, sauté the finely chopped shallot, then add tomatoes, sugar, and fish sauce.

    After 5 minutes, add the tofu and simmer over low heat for 15 minutes.

    Season with salt and pepper and sprinkle with chopped spring onion.

    Serve with jasmine rice.
