INGREDIENTS
- 800 g cooked jasmine rice
- 3 eggs
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 shallots
- 1 clove garlic
- 2 carrots
- 1 pc pak choi
- Spring onion
- Handful of coriander
- White sesame seeds for garnish
- 2 tablespoons sesame oil
- Salt
- Pepper
INSTRUCTIONS
- 1Cook the rice according to the instructions. Day-old rice is suitable for fried rice. Finely chop the shallot and garlic. Clean the carrots and pak choi and cut them into thin, long (julienne) strips. Chop the spring onion into smaller pieces.
- 2Heat a pan, add oil, shallot, and garlic, and sauté until translucent. Add the eggs, fry briefly and scramble, then add the cooked rice, fish sauce, soy sauce, and fry for 5 minutes until the rice turns golden brown.
- 3Add the carrots, pak choi, and spring onion at the end and sauté for another 2 minutes. Season with salt and pepper. Garnish the fried rice with sesame seeds and coriander.
