INGREDIENTS
- 500 g of peas (fresh or frozen)
- 1 onion
- 1 piece of leek (only the white part)
- 1 cm of fresh ginger
- 600 ml of vegetable broth
- 1 teaspoon of salt
- 1 tablespoon of oil
- Radish microgreens
- Almonds for serving
INSTRUCTIONS
- 1Chop the onion finely and slice the leek into rings. Peel the ginger and chop it finely as well. Sauté the vegetables in a tablespoon of oil until translucent. Add the peas, broth, and cook for 10 minutes on low heat.
- 2Pour the soup into a blender and blend until smooth. Season with salt.
- 3Serve with microgreens and sprinkle with small pieces of nuts.
