  • 80 g green French lentils
  • Half a teaspoon of salt
  • 125 g mixed salads
  • 1 avocado
  • Bunch of radishes
  • 100 g feta cheese
  • 20 g walnuts

DRESSING INGREDIENTS

  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Pepper

INSTRUCTIONS

    Soak the lentils for 2 hours, then salt and cook until tender. This takes approximately 10 minutes. Let the cooked lentils cool.

    For the dressing, mix olive oil, honey, mustard, salt, and ground pepper.

    Place the salad in a bowl, add diced avocado, sliced radishes, and cooked lentils. Dice or crumble the feta and add it to the salad.

    Pour the dressing over and mix. Serve on plates and sprinkle with walnut pieces.
