INGREDIENTS
- 350 g pasta
- 1 tablespoon olive oil
- 1 red onion
- 3 cloves garlic
- 1 tablespoon lemon juice
- 1 broccoli
- 500 ml vegetable broth
- 300 ml whipping cream
- 100 ml milk
- 150 g cheddar
- 1/4 teaspoon ground nutmeg
- 1 teaspoon salt
- 1 teaspoon pepper
INSTRUCTIONS
- 1Grate the cheddar coarsely. Dice the onion. Clean the broccoli and cut it into small florets.
- 2Crush the garlic and sauté it with the chopped onion in a pot with a tablespoon of oil. Add the broth, cream, and lemon juice.
- 3Add the chopped broccoli and raw pasta to the pot. Stir and let it cook, stirring occasionally, for about 10 - 15 minutes until the pasta softens.
- 4When the pasta is soft, add salt, pepper, cheddar, and nutmeg, and stir everything together until the cheese is completely melted and the pasta has a creamy consistency.
