INGREDIENTS FOR THE DOUGH
- 400 g semi-coarse flour
- 150 g nuts (e.g., 100 g walnuts and 50 g hazelnuts)
- 150 g granulated sugar
- 7 eggs
- 300 ml milk
- 120 g melted butter
- 1 baking powder
INGREDIENTS FOR DECORATION
- 3 apples
- 50 g dark chocolate
- 1 egg white
- 150 g powdered sugar
- Food coloring
INSTRUCTIONS
- 1Grease a high baking tray or pan with butter and dust with semi-coarse flour.
- 2Preheat the oven to 150 °C.
- 3Grind the nuts finely.
- 4In a large bowl, mix the sifted flour, sugar, baking powder, and ground nuts.
- 5In another large bowl (or mixer), place the whole eggs and start beating them. When they increase in volume, add the milk and melted butter. Then mix in the dry mixture.
- 6Wash the apples, peel them, and then cut them in half. Remove the core, blossom end, and stem, and carve faces resembling a wrinkled witch with a pointed nose.
- 7Spread the batter evenly on the tray and place the carved apple halves face up on it. Do not press them into the batter, just place them on top (Thanks to the baking powder and the large number of eggs, the batter will rise, and if we pressed the apples, they would unnecessarily hide in the cake during baking).
- 8Place the cake in the oven preheated to 150 °C and bake for about 40 minutes or until the surface of the cake starts to turn golden.
- 9While the cake is baking, prepare the witch hats. Melt the chocolate and on a board covered with foil, use a spoon to paint hats in a thicker layer so that they can be easily peeled off once set. Also, whip the egg white icing.
- 10Let the baked cake cool completely. Then, using a piping bag, create eyes and hair from the egg white icing on the faces, and finally, place a chocolate hat on them.
Tip
While carving the faces, it's good to have a large bowl of water with lemon and place the apples in it to prevent them from browning unnecessarily during carving.
This cake batter is also suitable for bundt cakes or cake bases.
