INGREDIENTS
- 140 g smooth spelt flour
- 85 g chopped oat flakes
- 35 g ground almonds
- 105 g butter
- 140 g cane sugar
INGREDIENTS FOR STRAWBERRY FILLING
- 600 g strawberries cut into thicker slices
- 50 g granulated sugar
- 1 vanilla sugar
- Juice of ½ lemon
- 5 fresh basil leaves
- 1 tablespoon vanilla pudding powder
INGREDIENTS FOR APPLE MIXTURE
- 2 Granny Smith (or other sour variety) apples, diced
- 1 cinnamon sugar
- Juice of half a lemon
INGREDIENTS FOR BAKING
- Butter for greasing dishes
- Handful of whole almonds (blanched or with skin)
INGREDIENTS FOR CREAM TO SERVE WITH
- 2 tubs full-fat sour cream
- 2 vanilla sugars
- Powdered sugar to taste
- Fresh strawberries
CRUMBLE INSTRUCTIONS
- 1Using your fingers, mix all ingredients until a crumble consistency is achieved.
STRAWBERRY FILLING INSTRUCTIONS
- 1Mix strawberries with both sugars and lemon juice and cook for a few minutes until the strawberries release their juice and soften slightly (we don't want to overcook them).
- 2Remove about a third and blend with basil leaves and pudding powder using an immersion blender. Return to the rest of the mixture.
APPLE MIXTURE INSTRUCTIONS
- 1Mix all ingredients together in a bowl.
BAKING INSTRUCTIONS
- 1Preheat the oven to 180˚C with top and bottom heat. Grease baking dishes with butter.
- 2Spread the apple mixture on the bottom, then the strawberry mixture, and sprinkle with crumble. Place a few almonds on top.
- 3Place in the preheated oven and bake for approximately 30 minutes.
Tip
The crumble is excellent with ice cream or a fresh cream. Prepare the cream by mixing sour cream with vanilla and powdered sugar, then stir in mashed strawberries.
