INGREDIENTS
- 600 g quality minced beef
- 1 Camembert cheese (120 g)
- 2 bunches of spring onions, 120 g each
- 1 egg
- 2 sprigs of marjoram
- 20 leaves of Thai basil
- 6 tablespoons coarse-grain mustard
- 1 tablespoon honey
- Salt
- Pepper

INSTRUCTIONS
- 1Wash and clean the spring onions. Finely chop one spring onion and the herbs. In a bowl, mix the meat, chopped spring onion, egg, marjoram, and 3/4 of the basil. Season the mixture with salt and pepper.
- 2Divide the meat mixture into 4 equal parts and form patties with a diameter of 11 cm. Cut the Camembert into quarters to create 4 triangles. Make a hollow in the center of each patty and insert the cheese, thoroughly encasing it with meat. It is important that the cheese is completely sealed within the meat to prevent it from melting out on the grill.
- 3Heat the grill to 230 - 270 degrees Celsius. Grill the meat for 4 - 5 minutes on each side. On the cooler edge of the grill, grill the whole spring onions. Turn them continuously.
- 4Meanwhile, mix the coarse-grain mustard with honey and the remaining basil.
- 5Serve the meat brushed with the mustard mixture and grilled spring onions. Young spicy mustard sprouts will perfectly enhance the overall flavor. Toasted bread or roasted potatoes are suitable as a side dish.
