
Stir-fried Pho Noodles with Beef

- 1 package of pho noodles
- 3 eggs
- 3 finely chopped shallots
- 4 cloves of finely chopped garlic
- 1 chopped fresh chili pepper
- 200 g beef sirloin
- 2 carrots cut into thin strips
- Handful of chopped spring onion
- Handful of mung bean sprouts
- Handful of chopped coriander
- 100 g crushed peanuts
- 1 lime
- 4 tablespoons vegetable oil
- 1-2 tablespoons tamarind paste
- 1-2 tablespoons cane sugar
- 1-2 tablespoons fish sauce
- 1-2 tablespoons oyster sauce
Soak the noodles in lukewarm water for half an hour, then drain them to remove excess water. Slice the beef sirloin into thin strips. Prepare the sauce by mixing all ingredients.
Heat oil in a wok or pan, add chopped garlic, shallots, and chili. Let the mixture become fragrant, then crack in the eggs and stir. After a minute, add the beef sirloin slices and stir-fry. Add the rice noodles, then the chopped vegetables (carrots, mung bean sprouts, spring onion) and pour the prepared sauce over everything. Stir-fry until the noodles soften (approx. 3 – 4 minutes).
Finally, sprinkle the noodles with coriander, peanuts, and a squeeze of lime.
