INGREDIENTS FOR DOUGH

- 50 g frozen corn
INSTRUCTIONS
- 1Roll out the puff pastry to 3 mm thick and cut out 20 identical shapes with a larger cookie cutter (If you want to give them a fun shape, use a bear-shaped cutter, for example, just like us. A heart or stars are also great. If you are not using the pockets for children, you can cut the entire dough into regular squares, which will prevent waste.).
- 2Transfer half of the cut-out shapes to a baking sheet lined with parchment paper. Set the other half aside.
- 3Now, prepare the sweet filling. Cream the butter with sugar until light and fluffy. Then, mix in the egg yolk and grated lemon zest. Carefully incorporate the quark. Whisk the remaining egg white into stiff peaks and gently fold it into the prepared mixture with a wooden spoon. Finally, fold in the blueberries or chopped strawberries.
- 4Next, prepare the savory filling. Place the butter in a bowl, add ground paprika, and salt and pepper to taste, then mix everything into a uniform paste. Subsequently, mix the egg yolk and quark into the mixture. Whisk the remaining egg white into stiff peaks and carefully fold it into the prepared mixture with a wooden spoon. Finally, mix in the corn.
- 5Whisk the egg well and brush it onto the edge of the dough, about 1 cm wide. Place a spoonful of filling in the center and cover with the dough you set aside, pressing the edges firmly and crimping with a fork. Continue this with all remaining pieces.
- 6Preheat the oven to 180 °C.
- 7Brush the prepared bears with the remaining egg and bake in the preheated oven at 180 °C for approximately 15 minutes (Baking time depends on the size of the cut-out shape.).
Tip
If you cut out more intricate shapes, such as a bear, you will have some puff pastry scraps left over. These pieces are harder to work with because if you rejoin them into one dough and roll them out, the dough will no longer be cohesive and will tear (especially if you are using homemade puff pastry). For this reason, leave the scraps as they are, cut them into smaller pieces, sprinkle with your favorite spices or seeds, and at the end of the preparation, bake them on a separate baking sheet. This will create tasty crisps, not only for a trip but also for an evening snack.
