INGREDIENTS FOR THE DOUGH
- 750 g puff pastry

- ½ teaspoon ground paprika

- 50 g frozen corn
INSTRUCTIONS
- 1Roll out the puff pastry to a thickness of 3 mm and use a larger cutter to cut out 20 identical shapes (If you want to give them a fun shape, use a cutter in the shape of a bear like we did. Hearts or stars are also great. If you are not making the pockets for children, you can cut the entire dough into regular squares, which will prevent leftovers.).
- 2Transfer half of the cut-out shapes onto a baking sheet lined with parchment paper. Set the other half aside.
- 3Now prepare the sweet filling. Cream the butter with sugar until white and fluffy. Then mix in the egg yolk and grated lemon zest. Carefully incorporate the curd. Beat the remaining egg white into stiff peaks and gently fold it into the prepared mixture with a spatula. Finally, mix in the blueberries or chopped strawberries.
- 4Next, prepare the savory filling. Place the butter in a bowl, add the ground paprika, salt, and pepper to taste, and mix everything into a homogeneous paste. Then mix in the egg yolk and curd. Beat the remaining egg white into stiff peaks and gently fold it into the prepared mixture with a spatula. Finally, mix in the corn.
- 5Beat the egg well and brush it around the edge of the dough, about 1 cm wide. Place a teaspoon of filling in the center and cover it with the dough set aside, pressing the edges well and sealing with a fork. Continue this process with all the other pieces.
- 6Preheat the oven to 180 °C.
- 7Brush the prepared bears with the remaining egg and bake in the oven preheated to 180 °C for about 15 minutes (Baking time depends on the size of the cut-out shape.).
Tip
If you cut out more intricate shapes, like a bear, you will have some puff pastry scraps left. These pieces are harder to work with because if you combine them back into one dough and roll it out, the dough will no longer be cohesive and will tear (Especially if you are using homemade puff pastry.), so leave the scraps as they are, cut them into smaller pieces, sprinkle with your favorite spices or seeds, and bake them on a separate sheet at the end of preparation, creating tasty crisps not only for trips but also for evening gatherings.
