INGREDIENTS
- 300 g lamb's lettuce
- 4 slices toast bread
- 2 tablespoons vegetable oil
- 20 g peeled shallot
- 3 tablespoons white wine vinegar
- 5 tablespoons rapeseed oil
- freshly ground pepper
- salt
- 200 g Tyrolean speck
FOOD AND WINE PAIRING
- The salad's flavor is best enhanced when combined with fresh, light wines. Choose white or sparkling wines with juicy acidity.
INSTRUCTIONS
- 1Trim the crusts from the toast bread and cut it into 0.5 cm cubes.
- 2Cut the speck into 0.3 cm cubes. Heat vegetable oil in a pan over high heat, add the speck and sauté for 1 minute, stirring constantly. Add the diced toast bread and sauté, stirring frequently, until golden brown. Then transfer to a bowl.
- 3Thoroughly rinse the lamb's lettuce in cold water, dry it and place it in a bowl.
- 4Finely chop the shallot, place it in a bowl, pour in the wine vinegar and gradually whisk in the rapeseed oil. Season with salt and pepper and mix with the lamb's lettuce in the bowl.
- 5Add the speck and bread croutons, mix and serve immediately.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
