INGREDIENTS

  • 300 g lamb's lettuce
  • 4 slices toast bread
  • 2 tablespoons vegetable oil
  • 20 g peeled shallot
  • 3 tablespoons white wine vinegar
  • 5 tablespoons rapeseed oil
  • freshly ground pepper
  • salt
  • 200 g Tyrolean speck

  • The salad's flavor is best enhanced when combined with fresh, light wines. Choose white or sparkling wines with juicy acidity.

    Trim the crusts from the toast bread and cut it into 0.5 cm cubes.

    Cut the speck into 0.3 cm cubes. Heat vegetable oil in a pan over high heat, add the speck and sauté for 1 minute, stirring constantly. Add the diced toast bread and sauté, stirring frequently, until golden brown. Then transfer to a bowl.

    Thoroughly rinse the lamb's lettuce in cold water, dry it and place it in a bowl.

    Finely chop the shallot, place it in a bowl, pour in the wine vinegar and gradually whisk in the rapeseed oil. Season with salt and pepper and mix with the lamb's lettuce in the bowl.

    Add the speck and bread croutons, mix and serve immediately.

Tip: For an especially delicate flavor, you can finish the sauce with a drop of lemon juice. Homemade spaetzle or wide noodles, which perfectly soak up the creamy sauce, are an excellent side dish.
