INGREDIENTS
- 2 eggplants
- 500 g Halloumi cheese
- 250 g sweet thin mini eggplant
- 500 g cherry tomatoes
- Handful of Thai basil
- 50 g lamb's lettuce
- 4 tablespoons teriyaki sauce
- Salt
INSTRUCTIONS
- 1Wash the classic eggplants and slice them lengthwise. Salt them and let them sweat.
- 2Preheat the grill to 250 degrees. Slice the cheese.
- 3Grill the eggplant, cheese, cherry tomatoes, and mini eggplant for about 5 minutes on each side.
- 4Once the ingredients are grilled, mix the chopped mini eggplant, halved tomatoes, chopped Thai basil, and teriyaki in a bowl.
- 5Salt each eggplant slice, top with lamb's lettuce, the prepared teriyaki mixture, cheese, and cover with another eggplant slice.
