INGREDIENTS
- approx. 600 g duck breast
- 50 g butter
- 1 tablespoon chopped chives
- 1 tablespoon chopped basil
- 1 tablespoon chopped coriander
- 1 head of garlic + 1 extra clove
- 2 yellow bell peppers
- Pink Himalayan salt
- Olive oil
INSTRUCTIONS
- 1First, prepare the herb butter. Mix classic softened butter with chopped herbs, add 1 clove of crushed garlic, and season with salt. Chill in the refrigerator.
- 2Lightly trim the top of the garlic head until the individual cloves are exposed. Drizzle with olive oil and lightly salt.
- 3Cut the bell peppers in half and remove the seeds.
- 4Heat the grill to 220 degrees Celsius.
- 5First, grill the duck breast skin-side down. Grill very intensely to render the fat and make the skin crispy. Grill for approximately 10 minutes per side, depending on the thickness of the meat. Duck meat is prepared to remain pink inside.
- 6Grill the bell peppers and garlic simultaneously with the meat. If they are ready sooner, move them to the very edge of the grill.
- 7After grilling, wrap the duck breast in aluminum foil together with the herb butter and let it rest for 10 minutes.
- 8After resting, slice the meat into thin pieces, season with salt, and serve with grilled bell pepper and grilled garlic.
