INGREDIENTS

  • approx. 600 g duck breast
  • 50 g butter
  • 1 tablespoon chopped chives
  • 1 tablespoon chopped basil
  • 1 tablespoon chopped coriander
  • 1 bulb of garlic + 1 extra clove
  • 2 yellow peppers
  • Pink Himalayan salt
  • Olive oil

INSTRUCTIONS

    First, prepare the herb butter. Mix softened butter with chopped herbs, add 1 clove of crushed garlic, and salt. Chill in the refrigerator.

    Lightly trim the top of the garlic bulb to expose the individual cloves. Drizzle with olive oil and lightly salt.

    Cut the peppers in half and clean out the seeds.

    Heat the grill to 220 degrees Celsius.

    Grill the duck breast first on the skin side. Grill very quickly to render the fat and make the skin crispy. Grill each side for about 10 minutes depending on the thickness of the meat. Duck meat should be prepared to remain pink inside.

    Grill the peppers and garlic simultaneously with the meat. If they are done earlier, move them to the edge of the grill.

    After grilling, wrap the duck breast in aluminum foil along with the herb butter and let it rest for 10 minutes.

    After resting, slice the meat into thin slices, salt, and serve with grilled pepper and grilled garlic.
