INGREDIENTS

  • 160 g whole wheat pasta
  • 40 g cashew nuts
  • 2 tablespoons nutritional yeast
  • Pinch of dried garlic
  • ¼ teaspoon salt
  • Pinch of ground pepper
  • 1 pc broccoli
  • 10 pcs cherry tomatoes
  • 100 g marinated tofu

INSTRUCTIONS

    Soak cashew nuts in water for 2 hours. Then drain the water, place them in a blender, add 1 dcl of water and blend. Now add nutritional yeast, dried garlic, salt, ground pepper and blend again. A smooth sauce will form. It's okay if it's thinner, the pasta will absorb the sauce.

    Cook pasta according to package instructions. Steam the broccoli. Cut tomatoes in half. Cut or tear the tofu into small pieces with your fingers.

    Assembly: Mix the cooked pasta with the sauce, add broccoli, tomatoes, and tofu. Stir and serve.
