INGREDIENTS
- 160 g whole wheat pasta
- 40 g cashew nuts
- 2 tablespoons nutritional yeast
- Pinch of dried garlic
- ¼ teaspoon salt
- Pinch of ground pepper
- 1 pc broccoli
- 10 pcs cherry tomatoes
- 100 g marinated tofu
INSTRUCTIONS
- 1Soak cashew nuts in water for 2 hours. Then drain the water, place them in a blender, add 1 dcl of water and blend. Now add nutritional yeast, dried garlic, salt, ground pepper and blend again. A smooth sauce will form. It's okay if it's thinner, the pasta will absorb the sauce.
- 2Cook pasta according to package instructions. Steam the broccoli. Cut tomatoes in half. Cut or tear the tofu into small pieces with your fingers.
- 3Assembly: Mix the cooked pasta with the sauce, add broccoli, tomatoes, and tofu. Stir and serve.
