INGREDIENTS

  • 1 kg of smaller zucchinis (4 pcs)
  • 300 g of ground turkey meat
  • 2 cloves of garlic (finely grated)
  • 4 tablespoons of tomato paste
  • 1 egg size M
  • 1 handful of finely chopped fresh basil (can be replaced with 2 teaspoons of dried)
  • 50 g of Parmesan (finely grated)
  • 50 g of sun-dried tomatoes (finely chopped)
  • 1 tablespoon of dried oregano
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 185–190 °C, prepare a baking sheet (30 cm × 40 cm) and line it with baking paper.

    Halve the zucchinis and scoop out the inner flesh using a spoon. Cut the flesh into small pieces and set aside. Salt the hollowed-out zucchini and set aside as well.

    In a large bowl, place the ground meat, inner zucchini flesh, finely grated garlic cloves, tomato paste, egg, basil, 30 g of Parmesan, finely chopped sun-dried tomatoes, salt, pepper, and oregano, and mix everything together.

    Now take the salted zucchini and dry the hollowed part with a paper towel. Fill the prepared zucchinis with the meat mixture and place them on the baking sheet. Once all the zucchinis are filled, sprinkle the surface with the remaining Parmesan.

    Finally, place the baking sheet in the preheated oven and bake the zucchinis for 40–45 minutes at 185–190 °C. After baking, remove the zucchinis from the oven, divide into individual portions, and serve.
