INGREDIENTS FOR STRAWBERRY MOUSSE
- 500 g strawberries
- 60 g granulated sugar
- 8 basil leaves
- 20 g lemon juice
- 650 g whipping cream (at least 33%, preferably 40% or a combination)
- 3 sheets of gelatin
INGREDIENTS FOR STRAWBERRY-CHERRY JELLY
- 100 g strawberries
- 100 g cherries
- 3 teaspoons vanilla sugar
- 2 sheets of gelatin
INGREDIENTS FOR FINISHING
- Crushed cookies or favorite granola/muesli approx. 150 g
INGREDIENTS FOR THE TIP
- Fruit liqueur
INSTRUCTIONS
- 1First, prepare the jelly. Blend part of the strawberries with sugar using an immersion blender. Chop the remaining strawberries and pitted cherries into pieces and mix them into the blended mixture.
- 2Soak the gelatin in cold water and let it soften. Gently heat the mixture and dissolve the squeezed gelatin in it. Chill in the refrigerator.
- 3For the strawberry mousse, place the strawberries in the container of an immersion blender or a deep bowl. Add sugar, lemon juice, basil, and blend until smooth (puree consistency). Pour in 150 g of whipping cream and blend again.
- 4Soak the gelatin in cold water. Once softened, squeeze and dissolve it in a little warmed cream (just enough to fit the gelatin). Pour into the strawberry mixture.
- 5Whip the remaining cream until stiff and fold it into the strawberry mixture with a spatula.
- 6Place crushed cookies or granola/muesli at the bottom of prepared glasses. Fill the glass halfway with strawberry mousse (it applies wonderfully with a piping bag, which helps keep the glass walls clean). Add a tablespoon of jelly and top with more strawberry mousse. Finish with jelly on top.
Tip
You can add a little fruit liqueur to the jelly.
