INGREDIENTS
- 4 whole wheat tortillas
- 150 g spinach leaves
- 60 g extra virgin olive oil
- 1 clove garlic
- 50 g unpeeled almonds
- Juice from half a lime
- 50 g Parmesan-type cheese
- Salt to taste
- 400 g pan cheese or grilling cheese
- 4 handfuls mixed greens
- 16 pcs cherry tomatoes

INSTRUCTIONS
- 1First, prepare the pesto - put the leaves together with garlic, almonds, and oil into a blender and blend until smooth. Then add finely grated cheese, lime juice, and season with salt.
- 2Grill the pan cheese on a pan or grill from both sides.
- 3Wash the lettuce leaves and let them drain. Also wash the cherry tomatoes and cut them in half or quarters.
- 4Spread the tortillas with pesto, place the mixed greens and cherry tomatoes on top, and finally add the grilled cheese.
- 5Now fold the tortilla from the ends to prevent the filling from falling out, then roll it up. Cut the tortilla in half.
- 6If desired, you can bake the tortilla at the end.
