INGREDIENTS
- 4 whole grain tortillas
- 150 g fresh spinach leaves
- 60 g extra virgin olive oil
- 1 clove of garlic
- 50 g unpeeled almonds
- Juice of half a lime
- 50 g Parmesan-type cheese
- Salt to taste
- 400 g cheese for pan or grill
- 4 handfuls of mixed salads
- 16 pieces of cherry tomatoes

INSTRUCTIONS
- 1First, prepare the pesto - put the leaves together with garlic, almonds, and oil into a blender and blend until smooth. Then add finely grated cheese, lime juice, and season with salt.
- 2Grill the cheese on a pan or grill on both sides.
- 3Wash the salad leaves and let them drain. Also, wash the cherry tomatoes and cut them in half or quarters.
- 4Spread the pesto on the tortillas, place a mix of salads and tomatoes on top, and finally add the grilled cheese.
- 5Now fold the ends of the tortilla to prevent the filling from falling out and then roll it up. Cut the tortilla in half.
- 6If you want, you can bake the tortilla at the end.
