INGREDIENTS
- 300 g of forest fruits (e.g., 200 g of frozen raspberries and 100 g of fresh blueberries)
- 400 g of whipping cream 40%
- 1 can of Salko
- 330 g of fresh strawberries
- 2 vanilla sugars
- 3 tablespoons of Strawberry Gin (optional)
INSTRUCTIONS
- 1Make a puree from the forest fruits – let the frozen fruit thaw or heat it, mix with the fresh fruit and blend with an immersion blender. Strain through a sieve.
- 2Mix the puree with Salko and set aside. Whip the cream until stiff and fold it into the fruit base with Salko using a spatula.
- 3If you have an ice cream maker, use it to chill the mixture. If not, no worries. Pour into a sealable container and freeze. After about an hour of freezing, prepare the strawberry pulp. Blend the strawberries, mix in the vanilla sugar and gin, and for a marbling effect, spoon islands of the strawberry mixture into the ice cream base. You can further swirl the islands with a skewer in circular motions over the ice cream.
- 4Let it freeze completely. Before serving, take it out of the freezer about 15 minutes in advance.
