INGREDIENTS FOR VEGAN FISH SAUCE
- 55 g brown sugar
- 1 teaspoon chili flakes
- 1 teaspoon chopped garlic
- 180 ml boiling water
- 2 tablespoons lime juice
- 1 ½ teaspoons salt
INGREDIENTS FOR SALAD
- 200 g green papaya
- 2 small carrots
- ½ red chili pepper
- 1 clove of garlic
- 2 teaspoons tamarind
- 2 heaping teaspoons brown sugar
- 4 cherry tomatoes
- Half a lime
- 6 pieces of green beans
- 2 tablespoons peanuts (roasted in a pan)
- Teaspoon of salt
INSTRUCTIONS FOR VEGAN FISH SAUCE
- 1Place all ingredients except the lime into a bowl or jar and pour boiling water over them, then add the lime.
INSTRUCTIONS FOR SALAD
- 1Using a julienne peeler or knife, cut the papaya and carrot into strips and place them in a larger bowl. Peel the garlic, halve the tomatoes. Cut the lime, including the peel, into smaller pieces. Halve the green beans.
- 2In a large mortar, throw in the garlic, chili, limes, sugar, and crush them. Add the tomatoes, vegan fish sauce, and crush all the ingredients again.
- 3Pour the mixture from the mortar into the bowl with the papaya and use the pestle and a spoon to mix all the ingredients. Let the papaya salad sit for a few minutes to allow all the ingredients to blend beautifully.
Tip
Be careful when handling it. Papaya contains bitter seeds – even the area around the seeds is bitter.
