INGREDIENTS FOR VEGAN FISH SAUCE
- 55 g brown sugar
- 1 teaspoon chili flakes
- 1 teaspoon chopped garlic
- 180 ml boiling water
- 2 tablespoons lime juice
- 1 ½ teaspoons salt
INGREDIENTS FOR SALAD
- 200 g green papaya
- 2 small carrots
- ½ red chili pepper
- 1 clove garlic
- 2 teaspoons tamarind
- 2 heaped teaspoons brown sugar
- 4 cherry tomatoes
- Half a lime
- 6 pcs green beans
- 2 tablespoons peanuts (pan-roasted)
- Teaspoon salt
METHOD FOR VEGAN FISH SAUCE
- 1Place all ingredients except lime into a bowl or glass and pour boiling water over them, then add the lime.
METHOD FOR SALAD
- 1Using a julienne peeler or knife, cut the papaya and carrots into strips and place them in a large bowl. Peel the garlic, halve the tomatoes. Cut the lime, including the peel, into smaller pieces. Halve the green beans.
- 2In a large mortar, add garlic, chili, limes, sugar and pound them. Add tomatoes, vegan fish sauce and pound all ingredients again.
- 3Pour the mixture from the mortar into the bowl with the papaya and mix all ingredients using the pestle and a spoon. Let the papaya salad rest for a few minutes for all ingredients to combine beautifully.
Tip
Be careful when processing it. Papaya contains bitter seeds – and the area around the seeds is also bitter.
