- Hollandaise sauce

INSTRUCTIONS
- 1In the first step of this recipe, cut the savory muffins in half, drizzle with a thin layer of olive oil, and toast on both sides.
- 2Place slices of smoked salmon on the toasted muffins.
- 3For the poached egg, bring a saucepan of water to a boil. Once boiling, stir with a spoon to create a whirlpool, into which you crack the whole egg. Let it cook on low heat for 2 minutes.
- 4Then place the poached egg on the smoked salmon and pour over with hollandaise sauce.
- 5Finally, garnish with chopped chives and capers.
