- 600 g potatoes
- 1 onion
- 5 eggs

INSTRUCTIONS
- 1Preheat the oven to 200°C. Clean the potatoes and onion and slice them into 3 mm slices. Arrange them on baking paper (try not to overlap the slices too much), drizzle lightly with oil, season with ½ teaspoon of salt, and bake for 15 minutes.
- 2Crack the eggs into a bowl, season with the remaining salt, add ground pepper, and whisk. Add the roasted potatoes with onion and gently mix.
- 3Pour a tablespoon of oil into a non-stick pan. Once sufficiently heated, pour the mixture into the pan and cook for 4 minutes. Then cover the pan with a plate, flip the pan upside down to turn out the tortilla. Carefully return the tortilla to the pan to cook the other side. The cooking time depends on the height of the tortilla; a pan with a diameter of 22 cm is used in the recipe. The tortilla is done when it slightly springs back when pressed; if it is completely firm, it risks being dry.
