INGREDIENTS FOR DOUGH
- 250 g smooth spelt flour
- 6 g baking powder
- 1/2 teaspoon salt
- 100 g white yogurt
- 20 g olive oil
INGREDIENTS FOR FILLING
- 150 g ham
- 100 g hard cheese or mozzarella
- 50 g ketchup with reduced sugar content
- Thyme (fresh or dried)
- Egg for brushing
YOU WILL ALSO NEED
- Cling film
- Parchment paper
INSTRUCTIONS
- 1Mix all the ingredients with 30 g of water and knead into a smooth stretchy dough. Wrap it in cling film and let it rest in the fridge for 15 minutes.
- 2Roll out the dough into a rectangular sheet with a thickness of 3-4 mm. Lightly dust the dough with flour while rolling.
- 3Spread ketchup over the sheet, sprinkle with thyme, and layer with slices of ham and cheese.
- 4Roll into a roulade and cut into 2 cm wide snails with a sharp knife, placing them on a baking sheet lined with parchment paper. Brush the snails with beaten egg and bake for 15 minutes in the middle of the oven.
