- 250 g self-raising flour
- 70 g vanilla sugar
- 190 ml Alpro original soy drink
- 75 ml sunflower/olive oil
- 40 ml boiling water
- 1 vanilla pod or 1 teaspoon of vanilla essence
- 3 tablespoons of sliced almonds
- A pinch of salt
1. A simple cake that you can surprisingly prepare easily in a few steps. Preheat your oven to 180 °C and grease a small cake tin with a diameter of about 20 cm with oil.
2. In a larger bowl, mix the flour, vanilla sugar, contents of the vanilla pod (or essence), and a pinch of salt. Add the soy drink, oil, and hot water. Mix everything carefully until smooth.
Pour the mixture into the tin, sprinkle with almond slices, and bake for 40-45 minutes until golden brown. Check with a skewer - if it comes out clean, it's done.

Perfect with coffee or tea, or as a dessert with fresh fruit and a plant-based whipped cream alternative.
