INGREDIENTS
- 200 ml Alpro chocolate soy drink
- 140 g all-purpose flour
- 1 teaspoon baking powder
- 20 g cocoa powder
- 3 tablespoons agave syrup
- 1 teaspoon salt
- 6 small pieces of vegan chocolate
- 35 g melted coconut oil + a little extra for greasing

INSTRUCTIONS
- 1Preheat the oven to 200°C and lightly grease 6 muffin molds with coconut oil.
- 2Start with the dry ingredients (except for the salt). In a large bowl, mix together the flour, baking powder, and cocoa until the mixture is lump-free. Then add the Alpro drink, coconut oil, agave syrup, and salt, and blend until smooth.
- 3Pour the batter into the molds, ideally about 2 cm below the edge. Now comes the chocolate magic! Press a small piece of chocolate into each muffin.
- 4Place in the oven and bake for 8 minutes until the muffins start to brown on top. Remove them from the oven and let them rest for 3-4 minutes.
