INGREDIENTS
- 250 g plain flour + extra for rolling out
- 120 ml lukewarm (ideally sparkling) water
- Teaspoon of salt
- Tablespoon of lard + extra for brushing the edges of the base
INGREDIENTS FOR THE BASE
- 1 ripe fig
- Handful of arugula
- 2 slices of dried ham, jamon, prosciutto or schinkenspeck
- A few teaspoons of fresh cheese or Gervais
- 3 tablespoons of sour cream
- Salt
- Freshly ground pepper

- Baking paper
INSTRUCTIONS
- 1First, prepare the dough. Mix the flour with salt. In a saucepan, melt the lard until it is liquid and add sparkling water to warm it up. Pour the lukewarm mixture into the flour in a larger bowl. Knead the dough for about 5 minutes until it is smooth and not sticky. Wrap the dough in cling film and refrigerate for at least 30 minutes.
- 2Prepare the ingredients with which you will top each base. Remember that Flammkuchen bakes very quickly, so everything must be sliced very thinly, almost transparently, including mushrooms, onions, or anything else that requires cooking.
- 3Preheat the oven to maximum (250 °C), keeping the baking sheet inside to heat up. This will ensure the base is crispy from the bottom.
- 4Divide the dough made from 250 grams of flour into 2 bases – this will create two medium-sized portions. Or leave it whole, then the base will cover the entire baking sheet. Roll out using a little extra plain flour and transfer to baking paper.
- 5Spread each base with 3 heaping tablespoons of the richest sour cream or crème fraîche (you could also use Gervais mixed with sour cream). Salt and pepper to taste. Then add any other ingredients as desired.
- 6When the oven is preheated, remove the baking sheet, quickly transfer the decorated Flammkuchen onto it with the baking paper, and place it in the upper part of the oven. At this point, switch the oven to grill and bake for 5-6 minutes, depending on the color of the edges and cheese.
- 7Serve the finished Flammkuchen immediately. You can immediately place another base on the baking sheet and repeat the whole process. Enjoy your meal.
