INGREDIENTS
- 50 g of English bacon
- 1⁄2 medium yellow onion
- Tablespoon of fresh parsley (optional)
- 30 g of Edam cheese
- 2 eggs size M
- 1 wheat tortilla (⌀ 20 cm)
- Salt
- Pepper
- Rapeseed oil
INSTRUCTIONS
- 1First, prepare the ingredients: Cut the bacon into small cubes and finely chop the onion. Finely chop the parsley and coarsely grate the Edam cheese.
- 2In a pan that fits the tortilla best (ideally with a diameter of 20 cm), fry the bacon over low to medium heat (about 1–2 minutes). Once it releases fat, add the onion and sauté for 2–3 minutes on low heat. Meanwhile, in a cup, beat the eggs with parsley, salt, and pepper using a fork.
- 3Pour the eggs over the fried onion and bacon so that the mixture is the size of the tortilla, and without interfering, let the eggs sit on the pan for about 10–20 seconds on low heat. Cover the half-cooked eggs with the tortilla and let them stick (another 10 seconds). Then carefully flip the tortilla down onto the pan and sprinkle the top (egg part) with cheese. Once the cheese is melted, roll up the tortilla and serve warm.
