INGREDIENTS FOR DOUGH
- 200 g all-purpose flour
- 50 g cornstarch
- 150 ml boiling water
- Pinch of salt
INGREDIENTS FOR FILLING
- 200 g Napa cabbage
- 4 cloves of garlic
- 1 tablespoon grated ginger
- 2 tablespoons sesame oil
- 3 tablespoons Kikkoman soy sauce
- 1/2 Cayenne chili pepper
- 2 spring onions
- Freshly ground black pepper
- Sunflower oil for frying
- 250 g cocktail pre-cooked shrimp
INGREDIENTS FOR SAUCE
- 8 tablespoons Kikkoman soy sauce
- 4 tablespoons sweet chili sauce
- 1/2 teaspoon grated ginger
- 1 tablespoon sesame oil
- 1/2 finely chopped Cayenne chili pepper
- 1 spring onion, sliced
INSTRUCTIONS
- 1For the dough, mix flour, cornstarch, and salt, and gradually pour in boiling water. Knead into a firm, non-sticky dough. Let it rest for 30 minutes.
- 2Meanwhile, finely chop the cabbage. Sauté sliced garlic, sliced spring onion, and chili pepper in oil. Once the garlic is fragrant, add the cabbage and shrimp. Stir in soy sauce, season with pepper, and set aside.
- 3In a bowl, mix all the ingredients for the sauce.
- 4Roll out the dough to a thickness of 1 mm. Cut out circles with a diameter of 8 cm. If you don't have a cutter, a glass or cup will suffice. Fill with the shrimp mixture, fold the circle over, and press the edges with your fingers. Sauté until golden brown on all sides in a non-stick pan. Then add water, cover with a lid, and let steam for 5 minutes.
