INGREDIENTS
- 500 g sea fish
- 10 mussels
- 6 cherry tomatoes
- 3 tablespoons tomato purée
- 1 clove of garlic
- Extra virgin olive oil
- 1 teaspoon chopped basil
- Salt
- Black pepper
- 2 - 4 large shrimp
- 1 teaspoon chopped parsley
INSTRUCTIONS
- 1Wash the fish, remove the scales, gut, fillet, and cut into smaller portions. Heat olive oil with a whole clove of garlic in a pan, add chopped parsley and basil, pieces of fish with bones and head, and shrimp.
- 2Add water to cover about half of the fish, let it simmer for a few minutes. Remove the garlic, add quartered cherry tomatoes and tomato paste, mussels, and add water so that the ingredients are almost completely submerged, and simmer for another 5 minutes.
- 3Serve as a soup in deep plates with toasted white bread.
