INGREDIENTS FOR THE BASE
- 4 eggs size M
- 80 g powdered sugar
- 40 g rapeseed oil
- 90 g white semi-coarse wheat flour
- 1⁄2 packet baking powder (6 g)
- 20 g Dutch cocoa
INGREDIENTS FOR THE CURD CHEESE LAYER
- 750 g semi-skimmed curd cheese
- 180 g powdered sugar
- 150 g butter (room temperature)
INGREDIENTS FOR THE CHOCOLATE LAYER
- 150 g dark chocolate
- 100 g butter (room temperature)
- 3 tablespoons semi-skimmed milk
- 30 g powdered sugar

METHOD
- 1First, preheat the oven to 180 °C, prepare a baking tray (20 cm × 30 cm) and line it with baking paper.
- 2Separate the eggs into whites and yolks. Whisk the egg whites in a tall bowl until stiff peaks form (2–3 minutes) and whisk the yolks with sugar in a larger bowl until foamy (2–3 minutes). Then add oil, flour, baking powder, and cocoa to the yolks. Mix until smooth, then carefully fold in the egg white snow with a wooden spoon.
- 3Pour the finished batter onto the baking tray and bake for 15–20 minutes at 175–180 °C. Then remove it from the oven and let it cool to room temperature (approx. 1 hour).
- 4Once the base has cooled, whisk the curd cheese with sugar and butter, spread it over the base, and place it in the refrigerator.
- 5Meanwhile, prepare the chocolate glaze: In a small saucepan over low heat, melt the chocolate and butter, stirring occasionally (2–3 minutes). Finally, stir in the milk and sugar, remove the mixture from the heat, and let it cool for 10 minutes. Then pour it over the base.
