INGREDIENTS FOR THE SAUCE

  • 8 larger plums, pitted (approx. 250 g, you can substitute with 250 g of plums in compote with 100 ml of syrup – in this case, omit the sugar and water)
  • 40 g granulated sugar
  • 2 tablespoons lemon juice
  • 100 ml water

INGREDIENTS FOR THE BATTER

  • 1 egg size M
  • 50 ml beer (can be substituted with sparkling water and 1 teaspoon of baking powder)
  • 180 ml semi-skimmed milk (can be substituted with any plant-based milk)
  • 200 g plain white wheat flour
  • 30 g granulated sugar
  • 1 teaspoon baking powder
  • 10 g ground poppy seeds
  • 20 g butter (or 1 tablespoon canola oil)
  • Salt

  • 200 g sour cream
  • 20 g powdered sugar

INSTRUCTIONS

    First, prepare the plum sauce: Place the plums, water, sugar, and lemon juice in a small saucepan. Bring to a boil, reduce the heat to low to medium, and simmer for 10–15 minutes, stirring occasionally. Once the sauce thickens, remove it from the heat.

    Meanwhile, prepare the batter: In a medium-sized bowl, mix the egg, beer, and milk. Add the flour, sugar, and baking powder. Work into a smooth batter and finally incorporate the poppy seeds and a pinch of salt.

    In a large pan, heat 1⁄2 of the butter over low to medium heat and fry the pancakes until golden brown (1–2 minutes on each side).

    Finally, prepare the cream: In a small bowl, mix it with the sugar.

    Serve the pancakes with the cream and stewed plums.
