INGREDIENTS FOR THE SAUCE
- 8 larger plums, pitted (approx. 250 g, you can substitute with 250 g of plums in compote with 100 ml of syrup – in this case, omit the sugar and water)
- 40 g granulated sugar
- 2 tablespoons lemon juice
- 100 ml water
INGREDIENTS FOR THE BATTER
- 1 egg size M
- 50 ml beer (can be substituted with sparkling water and 1 teaspoon of baking powder)
- 180 ml semi-skimmed milk (can be substituted with any plant-based milk)
- 200 g plain white wheat flour
- 30 g granulated sugar
- 1 teaspoon baking powder
- 10 g ground poppy seeds
- 20 g butter (or 1 tablespoon canola oil)
- Salt
INGREDIENTS FOR THE CREAM
- 200 g sour cream
- 20 g powdered sugar
INSTRUCTIONS
- 1First, prepare the plum sauce: Place the plums, water, sugar, and lemon juice in a small saucepan. Bring to a boil, reduce the heat to low to medium, and simmer for 10–15 minutes, stirring occasionally. Once the sauce thickens, remove it from the heat.
- 2Meanwhile, prepare the batter: In a medium-sized bowl, mix the egg, beer, and milk. Add the flour, sugar, and baking powder. Work into a smooth batter and finally incorporate the poppy seeds and a pinch of salt.
- 3In a large pan, heat 1⁄2 of the butter over low to medium heat and fry the pancakes until golden brown (1–2 minutes on each side).
- 4Finally, prepare the cream: In a small bowl, mix it with the sugar.
- 5Serve the pancakes with the cream and stewed plums.
