INGREDIENTS

  • 350 ml semi-skimmed cow's milk (can be replaced with plant-based milk)
  • 50 g whole oats
  • 50 g oat flour (finely ground oats)
  • 1⁄2 teaspoon ground cinnamon
  • 40 g granulated brown sugar
  • 1 large ripe banana (approx. 120 g without peel)
  • 2 tablespoons water
  • 10 g butter (room temperature)
  • 40 g dark chocolate (at least 70% cocoa)
  • 30 g walnuts (coarsely chopped)

INSTRUCTIONS

    Pour 350 ml of milk into a small saucepan and slowly bring to a boil over medium heat. Add the oats, oat flour, ground cinnamon, and 20 g of brown sugar to the boiling milk and cook over medium heat for 2–3 minutes.

    Then remove the saucepan from the heat, cover with a plate, and let it stand for 3–5 minutes.

    In the meantime, prepare the caramelized banana. Peel the banana, halve it, and then cut it lengthwise. In a small pan (preferably non-stick), add the remaining 20 g of brown sugar and 2 tablespoons of water. Slowly heat over low to medium heat for 1–2 minutes until the sugar starts to bubble slightly. Then add the banana cut side down to the pan and cook over low heat for another 2–3 minutes. Once the sugar starts to brown, add the butter, reduce the heat to low, and let it slowly melt (1–2 minutes).

    Divide the finished oatmeal along with the caramelized banana into individual bowls. Before serving, grate dark chocolate over each portion and sprinkle with coarsely chopped walnuts.
