INGREDIENTS
- 500 ml of water
- 100 g of dry wheat bulgur
- 120 g of any bell pepper
- 120 g of cucumber
- 80 g of shallot (can be replaced with yellow onion)
- 80 g of feta cheese (can be replaced with Balkan cheese)
- 2 tablespoons of olive oil
- Zest of 1 medium lemon (finely grated)
- Juice of 1 medium lemon
- 1 handful of fresh mint (finely chopped)
- Salt
- Pepper
INSTRUCTIONS
- 1First, bring about 500 ml of salted water to a boil in a large pot over medium heat. Once the water starts boiling, add the bulgur to the pot and cook for 15–16 minutes over medium heat.
- 2Meanwhile, prepare a large bowl and the vegetables. Wash the bell pepper and cucumber and cut them into small cubes, peel the shallot and chop it finely, and place everything in the bowl.
- 3Drain the cooked bulgur through a fine sieve. Then cool it under a stream of cold water in the sieve and add it to the vegetables.
- 4Crumble the feta cheese into the bowl with the bulgur and vegetables, add 2 tablespoons of olive oil, finely grated lemon zest, lemon juice, finely chopped fresh mint, salt, and pepper, and mix everything together.
- 5After resting, divide the bulgur salad into individual portions and serve.
