INGREDIENTS
- 3 wheat tortillas (⌀ 20 cm)
- 400 g ground beef
- 2 eggs size M
- 50 g yellow onion (finely chopped)
- 100 g gouda (finely grated)
- 50 ml semi-skimmed milk
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon dried chili
- 2 cloves garlic (finely grated)
- 20 g fresh coriander (finely chopped)
- 30 g breadcrumbs
- 5 tablespoons ketchup
- 1 teaspoon dried oregano
- Salt
- Pepper

INSTRUCTIONS
- 1First, preheat the oven to 185–190 °C and prepare a 12-cup muffin tin.
- 2Cut the tortillas into 4 parts (4 'triangles') and place 1 piece of cut tortilla into each muffin cup to form a basket.
- 3In a large bowl, combine the ground meat, eggs, onion, 50 g of gouda, milk, cumin, chili, garlic, fresh coriander, salt, pepper, and breadcrumbs. Mix well. Form the meat mixture into balls weighing 65–70 g and place them into the tortilla baskets.
- 4Once all the meat is prepared, mix ketchup and oregano in a small bowl. Spread the ketchup mixture over the meatballs and sprinkle with the remaining cheese. Place the tin in the preheated oven and bake the muffins for 35–37 minutes at 185–190 °C.
- 5After baking, remove the muffins from the tin and serve.
