Preparation method
Preheat the oven to 170 degrees Celsius - top and bottom heat. Score the ham skin in a criss-cross pattern to a depth of about half a centimeter. Insert a clove into each square.
Slice one half of the orange and squeeze the juice from the other half. Mix the pineapple juice, orange juice, maple syrup, ginger, and star anise together.
Arrange the orange slices in a baking dish lined with parchment paper. Place the ham shoulder on top of the oranges and pour the prepared marinade over it. Bake for approximately 1 hour. Baste the ham with the marinade every 15 minutes.
Chef's tip
Roasted potatoes or a baguette baked in the oven are excellent as a side dish.
