INGREDIENTS
- 350 g pasta (ideally cavatelli)
- 12 whole cherry tomatoes
- 200 g canned tomatoes
- 200 - 250 g burrata
- 2 cloves of garlic
- A sprig of fresh basil
- Extra virgin olive oil
- Salt
INSTRUCTIONS
- 1Start cooking the pasta in salted water, following the time indicated on the package. Keep in mind that the last 2 to 3 minutes should be finished directly in the pan with the sauce.
- 2In a large pan, heat olive oil, add whole, lightly crushed garlic cloves with the skin on, and quartered cherry tomatoes.
- 3After a short time of sautéing, remove the garlic and add canned tomatoes, about 6 lightly torn basil leaves, and simmer for about 3 minutes.
- 4Drain the pasta and add it to the sauce in the pan.
- 5The final step before serving is to add the inside of the burrata, whose creamy content will soften and enhance the entire dish. Mix, heat through, and serve. Garnish with the chopped outer part of the burrata and drizzle with olive oil.
