INGREDIENTS
- 350 g pasta (ideally cavatelli)
- 12 whole cherry tomatoes
- 200 g canned tomatoes
- 200 - 250 g burrata
- 2 cloves garlic
- Sprig of fresh basil
- Extra virgin olive oil
- Salt
INSTRUCTIONS
- 1Start cooking the pasta in salted water as usual, according to the package instructions. However, keep in mind that the last 2 to 3 minutes should be finished directly in the pan with the sauce.
- 2In a large pan, heat the olive oil, add whole, lightly crushed garlic cloves with their skins, and quartered tomatoes.
- 3After a short sauté, remove the garlic and add canned tomatoes, about 6 lightly torn basil leaves, and simmer for about 3 minutes.
- 4Drain the pasta and add it to the sauce in the pan.
- 5The last step before serving is to add the inside of the burrata, whose creamy content will soften and enhance the entire dish. Mix, heat through, and serve. Garnish with the chopped outer part of the burrata and drizzle with olive oil.
