INGREDIENTS

  • 200 g brown mushrooms
  • 1 shallot
  • 2 cloves garlic
  • 20 g walnuts
  • 4 eggs
  • 1 whole-grain baguette
  • Pinch of salt
  • Pinch of ground pepper
  • 1 teaspoon soy sauce
  • 1 tablespoon olive oil
  • Handful of green parsley leaves

INSTRUCTIONS

    Finely chop the shallot. Clean the mushrooms and cut them into smaller pieces. Roughly chop the walnuts and then toast them in a dry pan.

    Slice the baguette diagonally, drizzle lightly with olive oil, and toast in a pan on both sides.

    Then fry the eggs sunny-side up. Lightly salt them.

    Drizzle a little oil into the pan, add the shallot, and after a while, the mushrooms. Sauté until softened for several minutes. Season with salt, ground pepper, and soy sauce. Stir in the toasted walnuts and finely chopped green parsley.

    Serve the mushroom mixture on the baguette with the fried egg.
