INGREDIENTS
- 200 g brown mushrooms
- 1 shallot
- 2 cloves of garlic
- 20 g walnuts
- 4 eggs
- 1 whole grain baguette
- A pinch of salt
- A pinch of ground pepper
- 1 teaspoon soy sauce
- 1 tablespoon olive oil
- A handful of flat-leaf parsley leaves
INSTRUCTIONS
- 1Finely chop the shallot. Clean the mushrooms and cut them into smaller pieces. Chop the walnuts and then toast them in a dry pan.
- 2Cut the baguette into slices at an angle, lightly drizzle with olive oil, and toast on both sides in a pan.
- 3Then fry the eggs. Lightly salt them.
- 4Drizzle a little oil into the pan, add the shallot, and after a while, add the mushrooms. Simmer for a few minutes until softened. Season with salt, ground pepper, and soy sauce. Add the toasted walnuts and finely chopped flat-leaf parsley.
- 5Serve the mushroom mixture on the baguette along with the fried egg.
