INGREDIENTS FOR FALAFEL

  • 250 g dried chickpeas
  • 10 pcs wheat tortillas 16 cm
  • 1 lime
  • A handful of fresh coriander
  • Several leaves of Lollo Rosso lettuce
  • 2 small yellow onions
  • 3 cloves of garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground coriander
  • Salt
  • Freshly ground red pepper
  • Oil for frying

INGREDIENTS FOR MAYONNAISE

  • 6 heaping tablespoons of mayonnaise
  • Juice of 1 lime
  • 4 teaspoons ancho chilli paste (or another type of paste depending on spiciness)
  • Freshly ground black pepper

INSTRUCTIONS

    Soak the dried chickpeas in water 12 hours in advance.

    Then thoroughly rinse and drain the chickpeas.

    Blend together with finely chopped onion and crushed garlic. Mix in the spices and chopped fresh coriander. Salt and pepper to taste.

    Form the mixture into balls roughly the size of a golf ball.

    Heat a deep layer of oil so that the balls are submerged. First, sear them quickly and then reduce the heat. Fry for several minutes until golden brown. Place on paper towels to absorb excess oil.

    For the chilli mayonnaise, mix all the ingredients and place in the fridge.

    Dry roast the tortillas in a pan.

    Fold, fill with salad, falafel, and generously drizzle with mayonnaise, as falafel is quite dry on its own.
