INGREDIENTS FOR FALAFEL
- 250 g dried chickpeas
- 10 pcs wheat tortillas 16 cm
- 1 lime
- Handful of fresh coriander
- Several leaves of Lollo Rosso lettuce
- 2 pcs small yellow onions
- 3 cloves of garlic
- 1 teaspoon ground cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon ground coriander
- Salt
- Freshly ground red pepper
- Oil for frying
INGREDIENTS FOR MAYONNAISE
- 6 heaped tablespoons mayonnaise
- Juice of 1 lime
- 4 teaspoons ancho chili paste (or other type of paste depending on spiciness)
- Freshly ground black pepper
INSTRUCTIONS
- 1Soak the dried chickpeas in water 12 hours in advance.
- 2Then rinse the chickpeas thoroughly and drain.
- 3Blend together with finely chopped onion and crushed garlic. Stir in the spices and chopped fresh coriander. Season with salt and pepper.
- 4Form the mixture into balls roughly the size of a golf ball.
- 5Heat a deep layer of oil so that the balls are submerged. First, fry them very quickly to seal, then reduce the heat. Fry for several minutes until golden brown. Place on paper towels to absorb excess fat.
- 6For the chili mayonnaise, mix all ingredients and refrigerate.
- 7Dry-roast the tortillas in a pan.
- 8Fold, fill with salad, falafel, and drizzle generously with mayonnaise, as falafel is quite dry on its own.
